Directions for Making a Treacle Sponge Pudding Cake

  • ¼ cup whole milk
  • A pinch of salt
  • ½ cup all-purpose flour
  • ¼ cup granulated sugar
  • ¼ cup unsalted butter (Cubed and chilled). Have extra for greasing.
  • 5 tablespoons light treacle/golden syrup
  • 1 ½ teaspoons baking powder
  • ½ teaspoon vanilla extract
  • 1 large egg white
  • 4 ml medium potent CBD oil
  • Whipped cream or vanilla ice cream for serving (optional)


  • Using butter or non-stick spray, lubricate a 4-cup heatproof bowl or pudding basin.
  • Blend the flour, sugar, salt, and baking powder in a large mixing bowl.
  • To the dry ingredients, add the cubes of butter. Use your fingers to combine the flour to form a coarse sand texture.
  • Blend the vanilla extract, egg white, milk, and 1 tablespoon of the treacle in a measuring cup or bowl until well blended.
  • Mix the dry and wet ingredients while stirring until well mixed.
  • Sprinkle the remaining treacle into the base of the readied baking dish.
  • Into the prepared dish, gush the cake batter.
  • Use a round piece of parchment paper to cover the top of the pudding.
  • Fold the piece of foil over itself to make a hole in the center. Place the foil on top of the baking dish.
  • Wrap the outside perimeter of the foil with a string to hold it in place.
  • Put an upturned ramekin or small heatproof bowl into a large pot, then rest the baking dish on top of the ramekin.
  • Fill the pan with boiling water until it reaches half the sides of the pudding dish.
  • Once ready, have the pan covered and simmer on the stovetop over low to medium heat.
  • To confirm if it's cooked, press a toothpick into the center of the pudding, and it should come out clean. That should be after about 2 hours.
  • If the water levels go down during steaming, you can add more water to maintain the water level.
  • After carefully removing the baking dish from the pot, remove the foil and parchment paper.
  • To loosen the pudding from the pan, run a knife along the edge of your pudding.
  • Invert the pudding onto an up-turned serving plate over the top of the baking dish. If you wish, wrap around a plastic wrap and refrigerate overnight.
  • Top your steamed pudding with a scoop of vanilla ice cream or whipped cream.
  • Serve and enjoy while warm.

Gundry & Solimene (2017) recommended adding CBD oil to the topping. That's because CBD might lose potency due to high heat in the oven.
