  • 150ml milk
  • 125g Currants
  • 125g Dark Brown Sugar
  • 125g Sultanas/Raisins
  • 2 medium eggs
  • 3 tablespoons black treacle
  • 1 teaspoon Bicarbonate Soda
  • 1 teaspoon baking powder
  • 1 teaspoon mixed spice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 150g suet/unsalted butter
  • 125g oatmeal
  • 200g all-purpose flour. You'll need extra flour to coat the cloth and pudding surface.

Step by Step Method of Making Clootie

Although the many ingredients and steps can make this procedure feel overwhelming, it'll not be overwhelming when you follow the steps correctly.

  • Add flour, sugar, currants, sultanas/raisins, spices, oatmeal, suet or butter, bicarb, and baking powder into the large mixing bowl and blend.
  • Add the eggs and treacle and gently mix slowly. A large stick ball will begin to form. At this point, you use your hands to have together. If the blend seems dry, you can add a little milk. Add a small amount at a time.
  • Only aim to moisturize the ball enough to appear a bit wet. Excess moisture might cause you to hassle in adding it to the cloth efficiently.
  • You can clean and dry your hands at this juncture.
  • If you're satisfied with the blend, have your clootie dumpling cloth or cloot and put it in the colander in the sink. Gush boiling water over the cloot, ensuring it's completely covered.   • After the cloot is laid out, flour the entire surface of your cloot with an even and thin layer of flour. Shake off any extra carefully into the sink. Repeatedly confirm the water level and fill up if necessary.
  • Preheat the oven to 180 degrees Celsius. Drain the pudding in a colander and then consciously remove the cloth and paper. Put the pudding on an ovenproof dish and bake for fifteen minutes to dry it off and make the classic skin.
