Method Of Preparation


For The Budino

Mix the heavy cream and milk into a small bowl.
Into a medium pot, add salt, water, and the brown sugar then heat over medium heat
Cook the mixture till the sugar melts and turns dark brown, for 10-12 minutes. To this mixture, add the cream mixture then whisk till it starts to boil
Whisk the cornstarch and eggs in a separate bowl. To it add the butterscotch mix slowly, one cup at a time. Continue adding the rest of the mix while stirring till a thick custard-like texture is formed
Using a wire mesh, strain the custard then divide it into four glass serving cups. Use lids to cover them. Refrigerate.


For Caramel Sauce

Mix the vanilla and heavy cream in a medium saucepan then simmer over medium heat. Add the butter then turn off the heat as the butter melts, then set aside
In a small saucepan, add the butter, heavy cream, and then brown sugar put over medium heat. Whisk for 5-7 minutes till it gets thick. Add in the vanilla then continue whisking for another 2 minutes. Leave to cool, then refrigerate. Serve when ready

1 cup heavy cream
1 cup skim milk

3 large egg yolks
2/3 cup dark brown sugar

1 teaspoon espresso powder


Method of Preparation

Heat the milk and cream on medium-low heat until steaming, in a medium-sized saucepan
Add the sugar mixture into the cream then stir continuously for about 3 minutes until the sugar is dissolved.
Continue stirring on increased medium heat till the milk-cream mixture is very hot
Whisk together 1 tablespoon of the dark brown sugar and the egg yolks in a medium bowl as the milk-cream mixture is boiling
Take a cup full of the milk-cream mixture after it gets got then drizzle it into the egg while whisking the eggs vigorously
Transfer the tempered eggs into the saucepan. Continue stirring at medium heat till the mixture becomes thick for about 7 minutes
Remove the saucepan from the heat then add the cannabutter. Add the vanilla then stir
Let the mixture cool then pour into little ramekins, and cover them. Chill for some hours. You can also serve when slightly warm.
